Look, we’re not pit masters, smoke queens, or competition judges, but as native Texans, we do know our way around barbecue.

When we sit down to a rib (or preferrably an entire rack of ribs), here’s what we’re thinking about:

The Ribs


  • Seasoning:
    • Sweet?
    • Spicy?
    • Dry rub?
  • Smokiness:
    • Can you smell the smoke?
    • Can you see the smoke?
    • Can you taste the smoke?
  • Overall appearance
  • Overall impression


  • Bark
  • Tenderness
  • Consistency throughout the cut (or the rack)

The Extras

While ribs are undoubtedly the star of the show, there are things that can enhance one’s enjoyment! Those things might include:

  • Location
  • Atmosphere
  • Price/Value
  • Other menu items
